Halloween Biscuits
Ingredients:
- 150g sugar
- 100g butter
- 1 egg
- 160g flour
- 30g cocoa powder
- 1cc yeast
- 1cc de spices mix (cinnamon, ginger, nutmeg…)
Icing:
- 35g egg white
- 1 tbsp lemon juice
- 150g icing sugar
- Food colour
In a bowl, mix together the sugar, the room temperature butter and the egg.
In a second bowl mix together the flour, cocoa, yeast and the spices. Incorporate to the other bowl.
Mix until totally blended and shape into a ball. Cover with cling film and place in the fridge for one hour.
Preheat the oven at 160°C.
Dust some flour onto your working station then knead the cookie dough and roll it out until it is about 5mm thick (0.2 inches).
Cut out your cookies with cutters.
Take an oven tray and put on it some greaseproof paper. Place your cookies on it and cook for 8 minutes.
Take out of the oven and leave to cool.
Prepare your icing by whisking together the egg white, lemon juice and icing sugar until you get a smooth texture.
Drop in some food colour according to your taste.
