Peeling off the pomegranate, taking the seeds out of the cardamom pod, shelling the pistachios… If only it could be easier and faster… because everything has to be fast in this crazy world doesn’t mean one can’t kick back and take the time every once in a while. I’m learning patience, because the more time you put into something, the greater the sense of achievement.
Well, another time maybe, I am quite busy these days, so I will simply crush the pomegranate with bare hands. Quite messy, but for this one we only need its juice…
I know you didn’t get over the Cherimoya Panacotta and that some of you felt distressed because you couldn’t find this unusual fruit anywhere. For this reason, I’m offering you this other Panacotta variant – I make one every other anyway – which I hope will give you some sweetness in those hard times.
For those concerned with the amount of calories, you can replace half of the cream with milk. Alternatively you can seriously think to get yourself a membership with your local swimming pool...

I do need to get my hands on some cardamon pods! This dessert looks so easy to make and makes for one awesome presentation. I love the two flavors, so I am happy that you posted this. This recipe is a real keeper-yum!
