
It’s been a while I wanted to publish this recipe, which is one of my favourite desserts. Avocado in a sweet cake? What a weird idea! Believe me it works like a charm.
I tried an avocado cake for the first time at the Duke of Cambridge. They had a quite bare version of it, without icing or cream on it but it was a delight nevertheless!
Still, I needed more bite and texture…
At about the same time I discovered a great recipe for a Poppy seed cake (thank you Heidi!). I love the crunchiness of the seeds. One problem though is the 250g of butter that comes with it. No really an everyday treat.
So I told to myself: Why not replace the butter with avocado? It will make your cake moist just like butter but it’s much healthier.

I also needed an icing for my cake so I used good old avocado in it as well!

I often use avocado in sweet things too, including baking. Though my creations have never turned out as pretty!

I wanted to let you know that I tried this recipe out and I am in love !! I don't think i'll ever make a banana loaf or a lemon poppy seed loaf again, well at least not for a while because I am addicted to this avocado poppy seed loaf.

DeleteWhat a beautiful cake! Wow! I have seen many dessert recipes using avocado but have never tried it but this cake has my name written all over it. And love the poppy seed addition - I also love that crunch.
ReplyDeleteWow I LOVE avocado but like most people, I have never thought of baking with it or making it into something sweet! I must try this, it looks so beautiful, the green of the avocado that I love so much and the poppy seeds just look so so lovely. It also reminds me of kiwi. This cake looks so delicate. ReplyDeleteWhen you "mix together the egg and the sugar," do you mix just one egg and save the rest to separate into yolks and whites? or did you mean to mix the butter and the sugar, because i don't see where the 50grams of butter is used.
